What We Offer
Baywater Greens grows our hydroponic microgreens using sustainable farming methods throughout the year. Microgreens grow quickly, as they are the germination stage following sprouts, so we are constantly planting and harvesting to meet your needs. Microgreens have the same flavor as their namesake, like arugula microgreens, but offer their flavor in a more petite size, typically 1 to 1 ½ inches long. Our microgreens are packed with nutritional value and diverse flavors.

Perfect Pairings
Use microgreens anywhere that you would use their namesake! Microgreens are often found on tasting plates and as flavorful garnishes for high-end dishes. Microgreens can also elevate more traditional dishes, like deviled eggs or potato salad, to a whole new level. Toss them in salads for extra seasoning or sprinkle them on top of pizza or flatbreads for a pop of color and burst of flavor.
Ripeness
Microgreens are not sprouts, where the entire seed, root, and stem are consumed. Instead, microgreens are harvested when the leaves are expanded and full of flavor. Depending on the varietal of microgreen, the stems may be smaller or denser in size.
Storage
Microgreens are small and delicate, so they require a gentle hand when harvesting and storing. When cutting or trimming microgreens, use sharp knives to avoid bruising the plants. Harvested hydroponic microgreens should not be left at room temperature for extended periods of time, so store them between damp paper towels in the refrigerator or walk-in. Keep microgreens chilled until you are ready to serve them to avoid any wilting.
Our Farm
Baywater Farms is committed to high-quality hydroponic microgreens grown with care on our sixth-generation family farm. While the hydroponic growing we practice is a modern method, we still harvest and care for all of our plants by hand. In our ½ acre greenhouse, we grow 24 acres’ worth of delicious, fresh Maryland produce using sustainable methods. Since our greenhouse is climate-controlled and carefully tended to, our microgreens are available throughout the year.
