Baywater Farms Field Lettuces
Throughout the shoulder season, Baywater Farms grows a variety of field lettuces including Bibb lettuce and romaine lettuce. Unlike our hydroponically-grown spring mix, our field lettuces are grown in the nutrient-rich soil of our family farm. Our field lettuces range in flavor from buttery, to mild, to bright and fresh. Our field lettuces also range in color, but typically span from light pastel greens to deep forest greens. Our non-GMO field lettuces are chosen to be the perfect bed for a delicious seasonal salad or complement for fresh herbs.

Perfect Pairings
All of our non-GMO, field lettuces are delicious wherever you use lettuce, whether it’s in a crisp summer salad, a fresh wrap, or with wrap fillings piled on top. Baywater Farms crisp field lettuces are decadent when paired with poached or fried eggs and bacon.
Ripeness
The field lettuce harvest process typically begins 50-60 days after we sow the seeds, once the outer leaves have begun to grow 4-5 inches tall. Leaf lettuce is mature when it has deeply colored, ruffled and lobed outer leaves. Butterhead field lettuces, like Bibb lettuce, should feel firm, full, and dense. Romaine field lettuces, when ripe, have a long and loaf-like appearance with deep green outer leaves with texture. The ribs should be bright white and give a crisp snap when bent.
Storage
Just like with our hydroponically-grown Bibb lettuce, we use a delicate touch when harvesting to avoid damage to the leaves. Once Baywater Farms field lettuces are delivered to your restaurant or produce distribution company, they can be used immediately, stored, or washed and stored in paper towels to stay crisp.

Our family farm grows shoulder season crops to get the most deliciousness out of every growing season that we can. Our shoulder season crops include rainbow carrots, field lettuces, radish mix, fall squash, and sweet potatoes. All of our non-GMO, produce is grown using heirloom seeds and sustainable farming methods so that you feel good about what you eat and what you serve. The fruits of our labor aren’t just delicious, they’re locally grown with a conscience.
