Country Club Squash Casserole

Country club squash casserole is a Southern favorite. Whether you’re making it as a side for a dinner party or serving it as your main course, it is going to be everyone’s favorite dish. All you need is heirloom yellow squash, onion, water, sour cream, basil, breadcrumbs, cheddar cheese, butter, paprika, salt, and pepper! This dish is best served warm, but with a little hot sauce, it’s just as good cold!

Southern Cheesy Squash

For this recipe, you can use any combination of heirloom green and yellow squash. Slice the squashes thinly and add them into a skillet with oil and two to three tablespoons of minced garlic. Add salt, pepper, and your preferred spices (we suggest Old Bay!), and then add your favorite cheese. Cheddar is the most common choice for this recipe. Turn the heat to low and cover the skillet for ten minutes. Plate in a pretty, summery dish and serve hot!

Bacon-Stuffed Yellow Squash

This recipe is just as good as it sounds…maybe even better. After cutting three to four heirloom yellow squashes in half and then hollowing them out, stuff them with broken up butter crackers, cheddar cheese, bacon, onion, and diced tomatoes and chilies. For people with big families, this recipe will become an instant summer favorite.
