This light and peppery flavor pairs well with many other locally grown produce.  When it comes to arugula, think light and bright. While it’s flavor is distinct, it isn’t overpowering, so choose other organic salad ingredients that will work well.  Most chefs look to fruits like strawberries and cheeses like goat cheese to keep the salad feeling fresh.
