High in vitamin C

Microgreens are vegetable and herb seedlings that are extremely high in vitamin C. Vitamin C is an antioxidant that helps to protect your body from free radicals. Vitamin C is found in all kinds of microgreens, and all are extremely high in it as well. The lowest microgreen source of vitamin C was found to have almost twice the amount of vitamin C found in tomatoes. So if you find yourself needing to consume more vitamin C, then you need to make sure you eating more microgreens.

More nutritious than mature leaves

Believe it or not, microgreens have been found to be more nutritious for you than even mature leaves are. Microgreens in their young stage when measured against their more matured counterparts have been discovered to have considerably higher nutritional densities. Lettuce seedlings for example have a significantly higher antioxidant capacity and a higher concentration of phenolic compounds than their matured selves do. Even though matured greens are good for you and quite a healthy component of your diet, microgreens can be even more beneficial to both you and your body.

Carotenoids are found most commonly in carrots, and are famous for helping reduce the chance that you suffer from a harmful disease such as cancer or eye disease. Microgreens though, possess even more carotenoids than carrots, which have some of the highest levels of carotenoids out there. Carrots are only really rich in one carotenoid though, beta-carotene. Meanwhile, microgreens have beta-carotene, as well as lutein and zeaxanthin, which can help you even more in trying to prevent yourself from contracting a dangerous disease.
